Mango Chickpea & Black Bean Salad
Ingredients
- 1 can chickpeas, rinsed
- 1 can black beans, rinsed
- 1 jalapeño, diced
- 1 cup cherry tomatoes, halved or quartered
- 1/2 red onion, diced
- 1/2 cup cilantro, finely chopped
- juice of a lime
Optional additions
- 1/2 cup queso fresco
- sliced avocado
Dressing
- 2 Tbsp Mango 'Chups
- 1/2 cup olive oil
- 1/2 cup cider vinegar
- salt & pepper
Directions
- Combine dressing ingredients and whisk.
- Toss together chickpeas, black beans, tomatoes, jalapeño, red onion, and cilantro.
- Add the dressing and stir.
- Allow salad to refrigerate for at least an hour to let the flavors soak together. Juice with a lime before serving.
