Mango Chickpea & Black Bean Salad

Ingredients

  • 1 can chickpeas, rinsed
  • 1 can black beans, rinsed
  • 1 jalapeño, diced
  • 1 cup cherry tomatoes, halved or quartered
  • 1/2 red onion, diced
  • 1/2 cup cilantro, finely chopped
  • juice of a lime

Optional additions

  • 1/2 cup queso fresco
  • sliced avocado

Dressing

  • 2 Tbsp Mango 'Chups
  • 1/2 cup olive oil
  • 1/2 cup cider vinegar
  • salt & pepper

Directions

  1. Combine dressing ingredients and whisk.
  2. Toss together chickpeas, black beans, tomatoes, jalapeño, red onion, and cilantro.
  3. Add the dressing and stir.
  4. Allow salad to refrigerate for at least an hour to let the flavors soak together. Juice with a lime before serving.
